    When Richard White decided to open the Hazelwood Herb Farm in 1987 he may not have had a fire in his head, but he certainly had a fire in his belly to pursue his passion for gardening and cooking with herbs. Today Richard, 57, and his partner Jacynthe Dugas, 55, grow one of the largest selection of herbs in Canada; over 400 species on 1.75 hectares (4.3 acres), half a hectare (one acre) of which is devoted exclusively to herbs.

    Occasionally they have misgivings about the wisdom of giving up secure and lucrative careers – Jacynthe ran a department of the Canadian federal government in the nearby city of Nanaimo and Richard was a well-paid maintenance mechanic in a sawmill – for the hard work, long hours and economic uncertainties of herb farming. “But,” says Richard, “The thanks and appreciation of our loyal customers make it all worth while and gratifying. And we’re doing what we love.” When asked to explain the most satisfying aspect of running the Hazelwood Herb Farm, Richard replies unhesitatingly, “Customer response. Helping them with their needs; finding plants and offering gardening and cooking advice.” The most aggravating? “Never being able to get away from it,” says Richard.

    Richard and Jacynthe divide the work according to aptitude. In a double role reversal (Richard is a native of England and Jacynthe is French Canadian), Richard does all the cooking, runs the cooking classes and creates the culinary herb products. He also looks after the three greenhouses and the actual herb farm and garden. Jacynthe operates the gift shop, does the bookwork and ordering and formulates and prepares the herbal bath & beauty, cosmetic and medicinal products such as salves and creams. The only exception is the Echinacea tincture, which is Richard’s responsibility.

    When asked about his favorite or most popular culinary creation, Richard cites his Rosemary and Orange Chicken. Here’s the recipe:

    ROSEMARY AND ORANGE CHICKEN

    4 skinned and boned chicken breasts

    1Tbsp. oil

    Juice of 2 oranges

    ½ cup dry white wine or apple juice

    2 Tbsp. rosemary and orange jelly

    1 Tbsp. herbed vinegar

    ½ tsp. salt

    Pepper to taste

    1 clove garlic finely chopped

    1 tsp. cornstarch mixed with ½ cup of whipping cream

    1Tbsp. finely chopped fresh rosemary.

    Heat oil in a skillet: sauté chicken breasts on one side for 2-3 minutes, turn over add the wine, garlic and orange juice. Bring to a boil then reduce heat, cover and simmer for 10-12 minutes.
    Remove chicken and keep warm, bring the liquid back to a boil and add the jelly and vinegar. Reduce the liquid by half. Add the rosemary, and then swirl in the cornstarch mixture, stirring until it thickens. Add salt and pepper. Serve chicken sliced with the sauce and pasta. Serves four.

    And Richard’s favorite herbs? Rosemary (Tuscan Blue), Greek oregano and basil. Jacynthe also lists basil among her favorites, but reflecting her penchant for healing she names comfrey and chickweed as the top two. In addition to Jacynthe’s healing herbal studies and creations, she has just completed her studies to become a medical intuitive.

    One of Jacynthe’s most admired remedies is her Lemon Balm Cold Sore Salve:
    She first makes a sun extraction by placing a half-cup of tightly packed, clean lemon balm (Melissa officinalis) leaves in a glass jar and covers them with 1 cup of extra virgin olive oil. The lid is then tightened on the jar, which is placed in a warm sunny spot such as a windowsill or greenhouse. The jar is shaken daily to ensure that the oil is always covering the herbs. After one month the infused oil is strained and used in this recipe:

    ½ cup infused lemon balm oil

    ¼ tsp. camphor crystals (available in most drug stores)

    25 grams beeswax (slightly less than 1 ounce)

    1 Tbsp. honey

    1 tsp. lemon essential oil.

    Over a low heat the oil is warmed and the camphor crystals are stirred in until dissolved. The beeswax is added and the mixture stirred until it is melted. It is then removed from the heat and the honey and lemon essential oil are added. It is then poured into containers and allowed to cool before being covered. Instructions are to apply several times daily at the first sign of a cold sore.

    Richard and Jacynthe picked this particular property, four miles north of the town of Ladysmith, BC, for two reasons: one was the abundance of excellent water on the property. Says Richard, “I used to drill wells for a living so I know the headaches associated with poor quality or insufficient well water.” The other was its peaceful, quiet location while being sufficiently close to the main Vancouver Island highway to make it easy for tourists and visitors to find.
    They bought the 30-year old house on 4.3 acres in 1985. It required extensive renovation, most of which they did themselves. Richard’s skill and expertise as a millwright was also put to use building the three greenhouses. They named it the Hazelwood Herb Farm after the two hazel nut trees on the property. Within the first year they were selling 30 varieties of herbs. Then came the nursery, gift shop, display and working gardens. Today their shop boasts a huge variety of their own products, including potted plants, fresh cut herbs, gift baskets and culinary, medicinal, cosmetic and bath & beauty herbal preparations. They also give classes on gardening and cooking with herbs and Jacynthe shares her herbal soap-making talents with enthusiastic students.

    Complimentary garden tours are held – rain or shine – on the first and last Saturdays of the month from June to September. Guided tours for groups are available by appointment.

    Special events at Hazelwood Herb Farm throughout the year include Mother’s day complimentary Tea and Cake in the Gardens (held in the kitchen if the weather is disagreeable); Father’s Day Barbeque; Sampling Saturdays (for Richard’s culinary creations); Tea Thyme every Sunday afternoon with fresh baked herbal treats and the annual pre-Christmas “Shopping by Candlelight” event every November. This popular affair involves lighting up the shop, kitchen and garden entrance with hundreds of candles to create an inviting, cozy ambience. Complimentary food and drinks are served and Richard and Jacynthe showcase their new products.

    The Hazelwood Herb Farm and the town of Ladysmith are located at the northern edge of the Cowichan Valley on Vancouver Island, British Columbia. “Cowichan” means “The Warm Land” in the language of the native Coast Salish First Nations people. The rich, fertile valleys and mild climate here have spawned a burgeoning viniculture and the region is being hailed as the “New Provence.” To the west a rugged spine of mountains bisects the whole of Vancouver Island. A scenic drive through this heavily forested vista will bring you to the rugged west coast and pounding surf of the Pacific Ocean. The region is bordered to the east by the Strait of Georgia. These waters are rich in Pacific salmon, Dungeness crab, prawns and oysters and local restaurants pride themselves on their own unique ways of preparing these regional delicacies.

    The picturesque hillside town of Ladysmith – with stunningly beautiful views over the strait – sits precisely on the 49th parallel, which marks the US-Canadian border across most of the continent. The town – nicknamed “Heritage by the Sea” – was bred from the coal mining industry, which dominated central Vancouver Island around the turn of the last century. By the 1930s coal mining had fallen victim to exhausted seams, crippling labor problems and the Great Depression. Slowly forestry and fishing become the economic linchpins of the region, but now even these once dominant industries are in decline. Today cultural and eco-tourism (e.g. kayaking, scuba-diving, sailing, fishing, hiking etc.) are increasingly important and the area has much to offer. Ladysmith itself has recently undergone a remarkable renaissance; the town has done an admirable job of restoring its quaint fin-de-siecle ambience, winning a national Mainstreet Canada Award for the revitalization of the downtown. Harrowsmith Country Life magazine recently named Ladysmith one of the “10 prettiest towns in Canada.”

    Ladysmith is about a 90-minute drive north of Victoria, British Columbia’s capital and famous for its very English colonial tone. The drive will take you over the beautifully scenic Malahat Pass with stunning views of the Saanich Inlet and BC’s Gulf Islands. Three ferry terminals in greater Victoria bring visitors from mainland British Columbia and from Seattle, Anacortes and Port Angeles in Washington State. Victoria is also home to the world famous Butchart Gardens. A 20-minute drive north of Ladysmith brings you to the city of Nanaimo with two more ferry terminals servicing mainland BC.

    HOW TO GET THERE:

    The Hazelwood Herb Farm is open daily April-September from 11.00am to 5:00pm and from October-December, Fridays-Sundays, 11:00pm to 5:00pm. It is located at 13576 Adshead Road, Ladysmith, BC V0R 2E0 Canada. From Ladysmith drive north on the Island Highway three miles and take the Cedar Road exit to the right (east). After one mile turn left on Adshead Road. Hazelwood is 600 yards down this road on your left.

    From Nanaimo drive south on the Island Highway to the hamlet of Cassidy, about seven miles. Immediately after crossing the bridge over a creek to the south of Cassidy turn left on Haslam Road. After one mile Haslam Road forks left. Take the right fork, which is Adshead Road. Hazelwood is another mile along this road on your right.

    To get her flower and vegetable seeds off to a disease-free start, organic gardener M. Hess, Michigan, believes in a sweet approach. She sprinkles her seeds with Jell-O powder. She also feeds her young plants with Jell-O as they grow.

    Jell-O diet plan for plants

    Even after your plants are up and running, Jell-O can still help keep them healthy, M. Hess says. “In any organic, liquid fertilizer, such as compost tea, I always add Jell-O,” she reveals. Add 1/2 to 1 teaspoon of Jell-O powder to 1 gallon of fertilizer in a bucket. Mix well and use the mixture immediately to prevent thickening. Pour directly on the soil. Be cause of possible thickening, you don’t want to use a spray bottle with this mixture, M. warns.

    Many adventurous gardeners use Jell-O for their houseplants, but M. says it’s just as great at fighting off fungal diseases in outdoor plants. And, she adds, while any flavor will do, lemon’s her top choice, because she thinks the citrusy odor repels some bugs.

    Ingredients and supplies

    Peat pots
    Potting soil
    Seeds
    1 package Jell-O powder, any flavor with sugar
    Powdered skim milk, in amount equal to Jell-O (optional)
    Salt shaker or other sprinkling device
    Newspaper

    Directions
    1. Fill the peat pots with potting soil and place 2 seeds in each pot.
    2. Fill the salt shaker with the Jell-O powder (and powdered skim milk, if desired, for extra calcium) and sprinkle the powder lightly on top. Gently press down the powder and cover lightly with soil.
    3. Moisten the soil and cover it with damp newspaper.
    4. After 4 days, remove the newspaper and keep the seeds in a warm area with temperatures of 55° to 65°F.

    NOTE: Should your friends snicker about your plant’s snacking habits, just tell them that it makes sense when you think about what’s in Jell-O, M. says. “the gelatin helps the plant hold water, and the sugar feeds the organisms in the soil.”

    Starting your own herb growing business won’t take you much time at all. In fact you can be on your way to earning profits-good profits-in under a month. Here’s how you can succeed in the herbal business:

    First of all, you need a place for the plants to grow. You can build a mini-greenhouse/raised bed for under $300. It’s important to have access to the mini-greenhouse/raised bed from all sides and that it has plenty of sunlight, so don’t locate it next to a tree or other shaded area. A 40 inch wide by 30 foot long raised bed/mini-greenhouse is a good size. That’ll give you room for about 400 potted plants (it’s recommended you use six-inch pots – a bigger size will produce a bigger plant).

    Next you’ll need a good mixture of potting soil. This mixture, used by many professional herb growers, should do the trick:

    8 cubic feet topsoil. 8 cubic feet washed sand, 4 cubic feet perlite

    12 cubic feet peat moss, 10 pounds dolomite lime, 10 pounds dry organic fertilizer

    After you’ve decided what herbs you’d like to grow, you can buy herb seeds online from places such as Johnny’s Seeds and Richter’s. Be sure to focus on the most popular culinary and medicinal herbs to boost your sales.

    Now you’re ready to begin growing! Soon those profits will be growing too. Many of your seeds will germinate within a week or two. Take good care of them, as you can sell the seedlings as herb starts within a month. Only use organic fertilizers. These will help your herbs with a low-stress growth rate. Also, every week during the growing season, apply a liquid seaweed or liquid fish emulsion as a foliar spray. This will provide healthy nutrients.

    It’s also important not to over water your plants. Generally water them just once a day in the morning. Also be mindful of which herbs can still grow in cold weather and which ones might need to be started indoors.

    When your herbs are grown, you’re ready to start selling them. Based on your local laws, maybe you can sell them right out of your own garden. Or perhaps you can set up a roadside stand. A charity fundraiser can be a great place to sell potted herbs and people are often willing to pay more for them if they know some of the profits are going to a good cause. The farmer’s market is another great place to get customers.

    Consider placing an ad in the newspaper for your herbs. Make up flyers and put them up on local bulletin boards. Or consider having business cards printed. One successful grower puts a recipe on the back and found that customers are less likely to throw them out. Whatever you do, add your personal, creative touch, and you’ll find the customers will keep coming back.

    There are many turmeric herb benefits. This herb belongs to ginger family. It is used in India for thousands of years as an ayurvedic medicine. It is also an important spice in many of the Indian dishes.

    Maca (Lepidium meyenii) is a vegetable shaped like a turnip, and is somewhat like a root. This plant is unique in that it is only grown in the Andes Mountains of Ecuador and Peru above 12,000 feet.

    Maca root has been used by the indigenous peoples of Peru as a medicine and food source for over 2000 years. They also use it to support and turns infertility, enhance energy, sexual really and vitality.

    How was maca discovered?

    History tells us that the Spaniards overtook the Andes Mountains and took control. They began to suffer a loss of sex drive soon after they arrived. Both women and men alike suffered from sterility and their libido, too, suffered at that altitude. Therefore, they could often not conceive and if they did, they could often not carry their pregnancies to term.

    In addition, their animals, too, began to suffer reproductive difficulties. Horses, mules and dogs stopped having offspring. Even so, Spaniards soon realized that llamas, as well as other local animals, did not have any problems with their libido levels and reproduced successfully.

    How did they differ? The native people ate a root that could only be found high on the mountains. Animals, too, dug this root up and ate it. Once cooked, it will be mashed into a powder, then consumed continuously.

    The Spaniards began to take note of this and began to feed this root, maca, to their animals, and they began to consume it themselves, too. They learnt that native Peruvians are the experts in it.

    The Spaniards’ sex drive came back dramatically; animals, too, began to engage in reproductive activities once again, and the women could both conceive and carry their infants to term. In short, they lived happily ever after, as the story goes.

    How does this seemingly magical root operate?

    This food is beneficial to the endocrine and granular systems, which include glands involved in hormonal balance (e.g. thyroid, adrenal, and pituitary). Maca can impact key hormones in both the men and women to their advantage, but it doesn’t contain hormones itself.

    Maca helps nourish and stimulate the pituitary gland. It behaves like a tonic for hormonal regulation. When the pituitary gland is functioning optimally, the entire endocrine system, too, regains its balance, because pituitary gland is in control of the hormonal output of the other three glands involved.

    In the female body, estrogen is affected by maca. If a woman’s estrogen levels are too high or too low, this can affect a woman’s ability to become pregnant or to carry a fetus to term. If the body’s estrogen levels are too high, the levels of progesterone may become too low.     Milk Thistle herb has been employed for hundreds of years, as a body tonic. Especially for a poorly functioning liver, which in turn can help as a skin vitality treatment in conditions like acne vulgaris. It is formulated and made up by professional herbalists, by using a complicated process of using alcohol. The herb can be bought in tablet form and taken at the usual dose of 500 mg daily, with treatment normally lasting five to ten weeks at a minimum. So, a course of three and six months are common for Milk Thistle.

    Most of us know what goes in the basic Italian herb garden, but did you know that Italian cuisine consistently uses over 50 herbs and spices. What really makes Italian cuisine stand out so significantly is in the broad use of all of these commonly used herbs and spices from around the world. Some of them, such as cinnamon, comes from the bark of huge trees and so might not be convenient for most home gardens, and some are particular to certain growing zones. However, for the most part, these herbs and spices can be grown and incorporated into our attempt to create our favorite Italian dishes.

    Of course a discussion must start with the essential Italian herbs – basil, oregano, rosemary, thyme, parsley and sage. There are over 40 varieties of basil but it is “Sweet Basil” that is most used in Italian dishes. It has a broad waxy leaf and grows to several feet high. It will seed in several months of growth allowing for a continuous supply of this tender herb throughout the season.

    Oregano, like basil is a member of the mint family, has a number of cousins and grows perennially. And like basil, it is the Mediterranean variety that is sweeter and more delicate. Regular pruning will promote a more bushy growth.

    Rosemary is a favorite if for nothing else than its bouquet. Its essential oil permeates whatever sauce or meat it is combined with. It is perennial and can be shaped with some diligent pruning. By the way, their stems make great skewers for kabobs!

    Thyme is a perennial herb with numerous woody stems that are round and hard. It usually grows to about 8″ in height. Continuous harvesting of thyme will keep it under control. Keep in mind that dried thyme has a stronger flavor than fresh, just as ground is stronger than chopped. It blends well with other herbs and is great in stews.

    Italian Parsley is sweeter and tenderer than its curly leafed cousin and it universally used to blend with other herbs, enhancing their flavor. It is a biennial, if you can keep it that long, that is sensitive to too much sun or water. Planting it in a semi-shaded spot in soil that drains well but stays moist will keep you in parsley all season long.

    Sage is a perennial beauty of the mint family. It is one of those herbs that is great for many things – cooking, tea, medicine, aroma, beauty, the list seems almost endless.

    Consideration of some gardening factors is all that is needed.

    The region in which you live is an important factor. Do not plan a garden with Zone 8 plants in Zone 6; it is a waste of time and effort. Your local nurseries will usually only carry seeds that are suited for your region or zone, so a stop there should help you pick the right plants.

    Prior research and planning gives you the knowledge to help your garden provide you with much joy and pleasure.     variety in our garden as possible, but stuffing too many in too small of a space will create more problems than it is worth.

    While the amount of sunlight allowed to get through thick foliage can be a problem, the serious issue is the possibility of rust, rot, and mildew forming on your plants. Space your plants appropriately and allow the sun and air to help you maintain a healthy garden.

    When combating fungus air movement is king. You don’t want windy conditions but having air movement through your herbs is ideal. To accommodate this and for easy access plant the tallest herbs in the rear with shorter varieties near the front.

    My region has relatively strong winds. If you face the same situation then plan your garden using existing landscaping or structures to block the wind. Should this not be possible, then plant shrubs or bushes around your garden to reduce the wind speed.
