Fine Herbs Butter

1-1/2 teaspoon parsley; 3/4 teaspoon tarragon; 1/2 teaspoon rosemary; 1/2 teaspoon chives. This is delicious on cheese and egg dishes or can be used on fish, meats, or vegetables.

Mint Butter

Combine 1 tablespoon of mint and 1 tablespoon of lemon choice with the butter. Add the lemon juice gradually to prevent curdling. This is ideal with lamb or can be used on new potatoes, carrots or green peas.

Mixed Herb Butter

Add 3/4 teaspoons of each of the following dried herbs – chervil, chives, dill, mint and tarragon plus 1 tablespoon of lemon juice. This is great on noodles or broiled tomatoes or can be used on broiled fish or meat.

Sage Butter

1 teaspoon dried sage; 1/2 teaspoon dried celery leaves or 1/4 teaspoon celery seed; 1 teaspoon onion juice; 2 teaspoons lemon juice. Use it on poultry, lamb chops, veal, or vegetables.

Tarragon Butter

2 teaspoons dried tarragon; 1-1/2 teaspoon dried parsley; 1 Tablespoon lemon juice. This adds a unique flavor to tomato dishes, eggs, cheese, or noodles. It can also be used on lamb or fish.

When you have made the butter spoon it into ice cube molds or candy molds and use within 2 days. Alternatively, if you want to keep it longer then freeze it and remove several hours before it is required.

These are just a few ideas as the possibilities are endless. Try experimenting with your own favorite combinations. You should be able to think of many more recipes to make your own herb butter.

Have a family pizza night and make your own special Herb Tomato Crust. Top the crust with your favorite store bought or homemade sauce. Let the kids help choose the toppings and place them over the sauce. Kids love sprinkling the cheese over all. This is a healthy crust, replacing some of the oil with tomato juice and replacing a half cup of the all-purpose flour with the healthier whole-wheat flour. HERB TOMATO PIZZA CRUST

1/2 cup whole-wheat flour

1 1/2 to 1 3/4 cups all-purpose flour

1/2 tsp dried parsley flakes

1/2 tsp dried crushed rosemary

1 tsp active dry yeast

1/2 tsp sugar

1/4 tsp salt

1/4 tsp pepper

1/2 cup water

1/2 cup tomato juice

1 tsp olive oil

In a large mixing bowl combine the whole-wheat flour, parsley flakes, rosemary, yeast, Splenda, salt and pepper. In a small saucepan, heat the water, tomato juice, and olive oil to 120 to 130 degrees. Add liquid ingredients to the dry ingredients beating until smooth. Stir in the all-purpose flour, using enough to form a soft dough. Turn the dough out on a lightly floured surface; knead until smooth and elastic, about 5 minutes. Place the dough in a bowl that has been sprayed with nonstick cooking spray. Turn over once to coat the top. Cover and let set in a warm spot away from drafts until doubled in size. This will take about 45 minutes. Punch dough down and roll into a 12-inch circle. Transfer to a round pizza pan and build up sides, stretching as necessary.

To finish into a pizza use your favorite pizza sauce and toppings. Bake at 400 degrees for 25 to 30 minutes or until crust edges and bottom are browned.

I was asked, once, “What makes an herb an herb?” I opened my mouth, twice, gave up, and had to admit to the inquirer, and myself, that I had no idea what a herb was.

Of course I “knew” that dill and chives were herbs, and so were tarragon and oregano, and parsley and sage. I even knew some of the more obscure ones, like borage and valerian. But that still didn’t answer the question of what makes an herb an herb. Why is a certain plant considered to be an herb?

So, I went to find out. Had to, really, it became personal! And here’s what I discovered.

Whether you pronounce it with a silent “h” or not, a herb is considered to be any plant that’s prized for its foliage, scent, flavor, medicinal or other properties. A herb can be a grass, a flowering plant, a bush, a shrub, or even a tree.

Based on their usage, herbs typically fall into one of several categories. The most common are the Culinary, Medicinal and Ornamental herbs.

In addition, some are known as Sacred Herbs, and are used by many religions and cultures in spiritual ceremonies. In some cases, the herb is, itself, the subject of worship, such as with a form of Basil, called Tulsi, that is worshipped as a Hindu goddess because of its medicinal properties.

There are also herbs that are prized as pest controllers — natural pesticide, if you will.

Practically any part of a “herb” plant may be made use of for its particular sought-after characteristic or characteristics — some herbs do double or even triple-duty, occupying more than one category.

Oregano & Basil – Planting an herb garden without oregano or basil is like baking a lasagna without marinara sauce…Fuggedabowdit. Both of these guys love sun and don’t do well in freezing temperatures, so consider your climate before planting outdoors.

Thyme – Though native to Southern Europe, Thyme can now be found growing anywhere from Africa to Russia. It handles cold weather better than most herbs, and it’s one of the few that retains much of its flavor post-drying. Try placing it near areas with light foot traffic; if it fills in cracks between stepping stones, walking on it releases even more of its aroma!

If you really want to foolproof your plan, stick to growing your new herb garden indoors or try an herb garden kit. Give your new herbs lots of sunshine and be careful to avoid over watering.
